and Craig use kiln-dried Canadian maple for their cutting surfaces.
Maple is particularly wonderful because it tends not to split. They
began by acquiring their lumber from the sawmill down the road but,
after some investigation, they found that they could use the end
pieces of wood that were discarded by flooring companies. The sizes
were perfect for laminating together into butcher blocks and oyster
shucking boards. Now they don't let even a single shaving go to
waste. They make small garlic boards from scraps and pasta knifes
from the smallest pieces. The leftover shavings go to the dairy
operations for cow bedding and the smallest bits of wood go to heat
their greenhouses.
